Hummus is a traditional food from the Middle East, a spread for toasted pita, crackers, chips or raw veggies.
2 cup cooked chickpeas/garbanzo beans 2 Tbs high-quality olive oil
¼ cup fresh lemon juice 2 Tbs or more of tahini
1 tsp sea salt, or to taste 2 small garlic cloves
¼ tsp or more Hungarian paprika chopped fresh parsley for garnish
1 roasted red bell pepper, optional ½ cup bean stock, more or less
- Place chickpeas, lemon juice, tahini, garlic, and red bell pepper in food processor and process until smooth, adding olive oil and bean stock as necessary to facilitate blending.
- Add some sea salt and paprika, and adjust seasonings to taste. Lemon and salt are flavor enhancers, so you can add more of each to find just the right blend of salt and lemon without overpowering. If you overdo anything, lemon is your safe bet! Blend in parsley to balance excess garlic.
- Garnish with paprika and parsley.
- To store, drizzle olive oil over top, seal and refrigerate. Best eaten at room temperature.
